In 2019, our founders, Emily and Eric, embarked on an extensive journey across Vietnam—from the southern regions to the north—to immerse themselves in the country’s rich culinary heritage. During the pandemic, they meticulously developed unique concepts and refined recipes. In 2023, Cô Ba Cafe was born, dedicated to offering classic Vietnamese treats with a contemporary twist. The founders’ missions are to provide exceptional quality and create an experience that resonates with both discerning professionals and those seeking the authentic taste of home.

THE MURAL
The name Cô Ba translates to "Auntie Number Three," with the number traditionally used to indicate birth order within the family. Our signature mural—a portrait of a graceful young woman—serves as a tribute to Vietnamese heritage, symbolizing both elegance and tradition. The artwork is inspired by the first Miss Saigon, affectionately known as Cô Ba Trà Vinh, who rose to prominence in the late 1800s.


OUR PHILOSOPHY
Our core philosophy is to bring a modern twist to classic Vietnamese desserts and drinks. We strive to blend tradition with innovation, refining it for the contemporary palate. Our focus is on using natural ingredients, ensuring authenticity in every step of our process. From the traditional method of slowly extracting espresso with the Vietnamese phins, to making our signature toppings, such as pandan jelly and red pearls, meticulously in-house, we ensure every detail is carefully crafted. We believe in the small-batch concept to maintain the freshness and high quality of our products. Our space is designed to be clean, modern, and comfortable, offering our customers an authentic, elevated experience.
THE FOUNDERS
Both founders were born in Vietnam but raised in different parts of the United States. Eric grew up in the city of Portland, Oregon, while Emily found her roots in sunny San Jose, California. They share a deep passion for travel and, of course, food. With over 20 years of entrepreneurial experience between them, they’ve always been on the lookout for the next big idea. Now, they’re here—bringing their passion, expertise, and vision to Co Ba Cafe, where they’re elevating traditional Vietnamese desserts and drinks.
